The usual way of getting more spice in a bourbon is to increase the amount of rye in the mash bill. But there is another way that has gained popularity in recent years: finish it with French oak staves. Arguably pioneered by Maker’s Mark, more and more follow.

However, it should be noted that Penelope is known for finishing its bourbons in various ways, so it makes sense they use one of the more proven methods, too. Also, they use their OakScan process to assess the quality and impact of the wood.

The oak staves are sourced from the leading French cooperage Radoux, and generally French (European) oak is less sweet and more robust than its American counterpart. That leads to more spice and, well, oak. Given that bourbon tends to be on the sweet side, this is a nice addition.

Nose: caramel, butterscotch, pickled cherry, mild cassia, nutmeg, coriander; a mix of coffee and cocoa beans

Palate: caramel with dark chocolate chips and a healthy dose of red pepper; the spices are bolder and more intense, also there is leather. Some sweet cherry and a bit of maltiness as well.

Finish: medium to long, rather dry but surprisingly mild

Somehow I expected a load of oak and spice, and that is not it. Indeed, the Architect is a surprisingly well-rounded bourbon, displaying a remarkable complexity. At 52% ABV it furthermore has enough power to support this complexity.
